Whole30: round 2, week 2

I was ready to call it a Whole 7 last week.

I did it.

I was done.

Then God blessed me by connecting me with not one, but two friends ALSO doing Whole30 right now. It was a good encouragement to keep going.

My family got together to do Christmas this past weekend and that was hard. The weekend was filled with sticky buns, olive garden salads, fun breads, and yasso bars. It took a GREAT amount of self-control and will-power to keep my fingers from grabbing the treats I REALLY wanted. Warning, I didn't take a single picture of food this weekend.

Week 2:

Day 8:

Breakfast: eggs and compliant bacon and chia seed pudding

Lunch: turkey sausage meatballs and roasted eggplant

Dinner: taco salad with lettuce, pico de gallo, homemade salsa, taco meat, and guacamole


Day 9:

Breakfast: chorizo and greens frittata

Lunch: grilled london broil, roasted carrots, and roasted potatoes

Dinner: chia seed pudding


Day 10:

Breakfast: hard boiled eggs and sweet potato medalions. 

Lunch: turkey sausage meatballs, black olives, and the rest of my sweet potato from breakfast. 


Dinner: Sweet potato and butternut squash chili which was delicious! 


Day 11: 

Breakfast: chicken sausage and apples...it's kind of a staple. 

Lunch: sautéed veggies, the last of the turkey sausage meatballs, boiled egg, and "ranch dressing." It was about as good as it sounds...

Dinner: bacon apple burger, roasted okra, and sweet potato. 


Day 12: 

Breakfast: frittata and kombucha

Lunch: left over chili. It's a fav!! 

Dinner: spicy baked spaghetti squash. 


Day 13: 

Breakfast: Apple bacon burgers, banana, and kombucha. 


Snack: chia seed pina colada shake...ish. I was doing some meal prep and making my jarred chia seed pudding for the week and had some base left over (coconut milk and banana blended together). I was out of jars so I threw in some pineapple and some chia seeds and made a shake that held me well into the afternoon! 



Late lunch: a small portion of leftover spaghetti 



Dinner: mousaka 


Day 14:

Breakfast: blueberry chia seed pudding

Lunch: Larabar and Pina Fresca La Croix

Snack: small portion of some leftover mousaka from last night. 

Dinner: left over sweet potato butternut squash chili 


Things I learned this week:


  1. I have more will-power than I gave myself credit for. I just fell into the thought that I just couldn't say no. That really isn't it. I know that this time one bite of something could foil all that I have worked for but I am hoping that this self-control practiced now has given me the tools to effectively say no later. 
  2. I hit the high energy portion of the program about the time that boredom set in. I am struggling to keep it exciting. I tried some moussaka this week and that was a big hit. We will see what else I can throw in there.
  3. I really want a donut. Like, get outta my way! But, I am hanging on!
  4. The halfway mark seems exhilarating and daunting.
